Ingredients:
- A whole chicken cut into pieces or chicken pieces of choice (breast, leg, thigh)
- 2 onions – red or white
- 3 peppers – your favourite (red, yellow, green)
- 2 carrots
- 1 whole garlic
- Olive oil
Method:
- Peel and cut the onions in 1/2 or 1/4
- Scope out he peppers and cut them into strips
- Divide the garlic into cloves
- Pour olive oil in the bottom of a roasting tray and cover with the veggies and the chicken pieces
- Pour a little extra oil on top
- Sprinkle with salt
- Preparation time approx. 15 minutes
- Bake in the oven at 160 degrees for 75 minutes
- Serve with Alioli (see recipe)
- Winter version – exchange the peppers for root veggies
